Mindfulness! …or not.

Sometimes we just get involved in doing whatever nonsense we’re doing. In other words, not paying attention to what’s important (good health, for instance). I was just online, checking my e-mails, Facebook, listening to a TED Talk, etc., etc.  NOT doing more important things — like making dinner for instance.

All of a sudden, I felt like garbage — you know the feeling, if you’re diabetic. When I got up from the table, my legs felt heavy. I looked at the clock — 7:30. When was lunch? Did I eat lunch? Ugh. Of course, I checked my blood sugar immediately because, like any long-term diabetic, I knew where it was. The glucometer read 68! Now, for many of you, that sounds great, right? For me, when I go below 100, I feel crummy — weak, clammy. I couldn’t care less what the “norm” is. I know what’s right for me. Low blood sugar is no joke.

I don’t know when the last time was that I had orange juice in my refrigerator. WAY too high in sugar. However, I bought it last week because I had a hankering for Chicken a l’orange. The remaining OJ has been sitting in there ever since. So, I drank a glass and almost immediately I felt like myself again.

As soon as my glucose level rose, I cooked dinner — salmon, spinach and beets. I’m back to “normal.”  🙂

The topic of this post is MINDFULNESS for a reason. Not being mindful about what I’m doing is usually what gets me in trouble. We all do it — misplacing things, losing track of time. The importance of mindfulness, I’ve learned, can’t be stressed enough. Focusing is imperative. I’ve learned that being aware — acutely aware — makes for a more balanced life.

That lack of mindfulness is what caused my blood sugar to drop. NO excuse for that. The good news is that, because it happened, I’m reminded to pay strict attention and be mindful in EVERY area of my life. Scheduling healthy meals and staying on track HAS to be uppermost in my thoughts. Get with it, Kathy!

IT’S COLD outside but, I went “fishing” anyway!

I yell at myself for complaining about the cold weather, after the horrific winter we had last year in the Northeast — it was the worst!

Today I went fishing — not in the great and wonderful Atlantic Ocean,

I took my “fishing rod” — or rather my wallet, and headed to the fish store!

I’ve been eating so much chicken lately, I’m beginning to quack!  A change of pace was definitely in order, so off I went, not in my boat, but instead in my nice warm car.

Later, I headed home with my “loot” — swordfish, salmon, and flounder stuffed with crabmeat.  I picked up a bright yellow pepper to add to the vegetables I already had,; the end result will be grilled or roasted veggies — not sure which, but I’ll let you know.

Have to go now; picking up my walking buddy — gotta get that blood sugar level down!  I’ll let you know later… (By the way, that link above will put you in touch with a very good article on this topic.)

I’m BAAACK… and very happy.  My blood sugar dropped 56 points after walking tonight and 70 points after walking this morning.  It fascinates me, for some reason, that walking has such an impact on it.  Obviously, this is not new news; but, when I monitor/journal my numbers, the results never cease to amaze me.    🙂

If you’re not walking (yet), I strongly recommend that you try it, and be sure to write down the pre and post numbers.  No matter how long you walk, I can’t imagine that you won’t see a drop in your numbers. It’ll boost your confidence!

Go ahead, dust off those sneakers;

*** BUT,  if this is NEW for you — CHECK WITH YOUR DOCTOR FIRST.  There are do’s and don’ts for everything.  We’re all different, so talking with your doctor will get you the vital information that you need.

Here’s an example, as it relates to ME:    If my blood sugar is on the low side (and I know it will drop at least 50 points while I’m walking),  I’ll have a small snack or some crackers to bring my level up before I go walking.  Now that I’ve noticed that my levels are dropping regularly with exercise, I take along a carb (pretzels/crackers) in my pocket, for the just-in-case time that I don’t feel “right.” (Per my doctor’s advice.)

Talk to your doctor, and he/she will give you the advice that’s right for you!

Fishing Anyone…?

I threw a fishing line into my freezer and came out with a beautiful piece of salmon.  🙂  Topped with my fave Penzey Spice, “Sunny in Paris,” I paired it with green beans and sliced grape tomatoes with a tad of grated parmigiana cheese.  IMG_2397For dessert (and to stifle my craving), Sugar Free Pudding, chocolate with a dollop of fat-free whipped cream.  My go-to dessert is usually sugar-free Jello, but I’m in the mood (CRAVING!) for chocolate. Come hell or high water, I’m not going to cheat, so pudding it is!

Just my opinion, but the “Cook and Serve” S/F Pudding far surpasses the instant pudding. It takes a few extra minutes, but the after-taste is eliminated, and it’s fabulous warm.  Yummy! Be careful while shopping — S/F is the BLUE box.

I’ve found that when I have a strong craving, if I can wait 15 or 20 minutes, it usually passes. Sometimes that amount of time can be torture, so I try to have something “diabetes appropriate” that can fill the bill.  For me, that’s usually either chocolate Sugar-Free Pudding or S/F Jello.  Adding cut up pieces of an apple to the Jello gives me a dessert that’s filling, delicious, and has the crunch that we often look for. There are lots of options — be creative!
