How to Celebrate…

…ANYTHING! It’s been a pretty busy summer, especially in terms of food. There were birthdays, retirements, graduations, new babies — you name it. They all add up to FOOD!

For the most part, I used PORTION CONTROL. I’m convinced the answer lies in the amount of food we eat:

At home it’s easy — I simply use luncheon plates instead of dinner plates — that, and no seconds, usually works.

At a friend’s home, I certainly can’t control the size of dinnerware they use. In that case, I drink a big ol’ glass of water before  I approach the buffet (sometimes I down the H20 before I leave home). When dinner is served, I survey the table and choose the foods that I like the most. I totally ignore anything that’s not on the top of my list of favorites — no wasted calories for me!

In a restaurant, at a sit down dinner, I ask for a to-go box when I order. This eliminates any issues — when the dinner comes, I simply take half of everything and place it in the container. No embarrassment!  Experience has shown me that many of the people at the table will follow my lead. Later they thank me for the ingenious idea — I give credit where it’s due: My sister taught me that “little didie” and it works every time. Try it! You’ll see — by the time you’re finished your 1/2 dinner, you’re full. You’ll be even happier in the next day or two when you get to eat the delicious left overs. (Why is it that everything tastes better the next day?) I don’t understand people who won’t eat leftovers. Different strokes, I guess.

We’re discussing CELEBRATING an occasion; that always calls for a cake. Most times the hosts have a beautiful bowl of fruit, along with the cake, cookies, and other assorted no-no’s. Truth is, the cake always SCREAMS my name — Kathy! I’m over here. Ugh. It’s torture. Here’s what I’ve done this summer.  I put a small serving of fruit on my dessert plate first, (I always cut the fruit up into smaller pieces — it just looks like there’s more than there is.) now there’s room for a tiny piece of cake.  That’s it, and I’m a happy 🙂 woman!

How could I not be comfortable with those decisions?  I haven’t deprived myself of anything, so there should be no cravings. YEA!

Day #2, 2017! 5 Steps to Keeping on Track

Can you believe it? 2017!

It’s so cliché, but time REALLY does fly. My plan is to make the most — on EVERY level — of 2017. This T2D will beat the hell out of her A1C.  🙂

Cleaning out my refrigerator and freezer is how I started my day. Then, I moved on to food shopping to be sure my cupboards are filled with healthy choices. NO excuses!

I made a batch of sugar-free raspberry Jello, in an effort to be prepared when the sugar beast invades my brain! Sugar-free jello seems to calm “him” down.

I have visions of him “dancing in my head” — NOT “sugar-plum fairies,” the Sugar BEAST! But, it’s okay. I’m prepared to “take care of him” in 2017. BRING IT ON, BEAST!  🙂

Next on my agenda is to create a pot of piping hot Vegetable Barley Soup. It’s threatening to get colder here in the Northeast, and I’ll be ready.  I love to make soup and freeze individual portions. It just makes life easier, and the individual portions help to keep my blood sugar levels in check.

My walking buddy and I conferred and we’re starting 2017 off on the “right foot” (pun intended)!  We’ll have to walk the mall, but it really doesn’t matter as long as one foot is planted firmly in front of the other! Walking is the #1 way to lower my blood sugar — works EVERY time.

Monitoring my blood sugar has to be at the top of my list, even though it’s a ROYAL pain in the butt. The bottom line is that I know when I write it down (my definition of “monitoring”), I have a MUCH better chance of staying on track.

 

So, here’s how 2017 is shaking out thus far. I will be keeping on track by following these 5 STEPS:

  1.  Keeping diabetes-friendly foods, not just in the cabinets but, prepared to eat at any time.
  2. Maintaining awareness of the SUGAR BEAST lurking around every corner.
  3. Preparing and freezing individual portions of foods. Portion control is imperative, if I am to succeed on this journey.
  4. Exercising: God bless my “walking buddy,” Maureen,  — she keeps me accountable. You too can have one — ask around!
  5. Monitoring my blood sugar.

There are MANY PATHS we can take on this journey

with lots twists and turns and forks in the road but, with the support of other Type 2 Diabetics, I believe we can make healthy choices and be successful.

There are a multitude of  choices — let’s take the right path towards a healthy diabetic life!

Menus — On-the-Run, as well as At Home!

In a recent post, I let you know that I’d gone to a dietician at the Diabetes Education Center near my home. I said I’d post information that Maggie (Registered Dietetician and Certified Diabetes Educator) had given me, in terms of monitoring my food, choices, and alternatives. Balancing our blood glucose levels is imperative, and eating the right foods at the correct times will help T2D’s to do just that!

BREAKFAST is touted as being The Most Important Meal of the DayNOT in my world!  I want it to be.  I recognize the importance, but I have some issues with it. I’ve got ISSUES!!!  🙂  🙂  🙂

  • I’m allergic to eggs. That leaves out a LOT of recipes.
  • I have a “thing” about the TEXTURE of some foods. Therefore, Oatmeal = I’d rather be shot!

That being said, Maggie helped me with some alternatives.  So that YOU get the full benefit of my appointment with her, I’m going to list ALL the choices (including the ones I won’t be eating).

First off, she gave me a brief list of some “At Home Menus” that contain 45-60 g of carb; less than 10 g fat; at least 8 g fiber. Perfect, right? O.K., take a look:

  • Oatmeal, 1 cup cooked  (Hope YOU enjoy it!)
  • 1/2 cup 1% milk
  • 1/2 apple

  • 2 Kashi Go Lean Waffles
  • 1 T. Light Margarine/Sugar-Free Syrup
  • 1/2 cup blueberries
  • 8 oz. 1% milk

___________________________________________

  • 2 egg whites OR 1/2 cup, Egg Beaters    (NO CAN DO, per allergist; but, that’s just me. YOU can feel free to dig in!)
  • Low fat Sausage Links
  • 2 slices whole wheat toast
  • 1 T. Lite Margarine
  • 1 small orange

Here are some “On the Run Menus” for those of us who are on-the-run!  They contain 30-45 g carb!  All good so far!

  • Cannon Lite n’ Fit Yogurt
  • BelVita Breakfast Biscuit — mixed berry  (7 g. fat)

Deli:

  • 2 egg whites on Rye
  • 1 cup fresh fruit (10 g. fat, 15 g carb.)
  • Quaker Breakfast Flats (27 g. carbs)

  • Special K Flatbread Breakfast Sandwich (egg, vegetable, Pepper Jack cheese)
  • small fruit  (7 g. fat)

  • McD’s Egg McMuffin*

(12 g. fat)

* In my case, I can eliminate the egg and have the McMuffin with sausage and cheese!

I have a mini-confession:  I NEVER eat margarine! Nope, I eat the real deal. Butter makes everything better.  🙂   The truth is, I eat VERY little of it — no big deal.

So, my fellow T2D’s that’s it for some of Maggie’s breakfast suggestions. Whether we’re eating AT HOME or ON-the-RUN, now we have NO excuse!  (Thanks, Maggie.)

I believe I promised a list of Maggie’s great snack ideas, too. That will be for another post. However, in an effort to encourage you to meet with a Dietician/Diabetes Educator in your area, I won’t be giving you the entire list. After all, I’m NOT Wiki-leaks!!!!!

PORTION CONTROL — Name of the Game —

It’s the name of the game in “beating” my Type 2 Diabetes, and I seem to be mastering it. I’m working on controlling my “portions” of everything;  probably why I’m so focused.

Because I’m downsizing and purging my house, I’m constantly evaluating what I NEED and don’t need. I’ve been in this house for 37 years so, trust me, that’s a LOT of stuff! Thanks to tips from minimalist, Billy from Simple Living Over 50, I’m progressing. His blog is amazing  — check it out, you won’t regret it.

So, basically, what I’m doing is controlling my “portions” in terms of what I really need (things), along with food. Watching what and how much I’m eating has gone a long way to lowering my A1C. It’s helping and I’m hoping that I can hang on to this discipline. This is the balance that I need in my life. Managing my diabetes and my environment will certainly help to achieve the balance that I yearn for. I’m following this path now, and this T2D is dedicated and determined to live a balanced and minimalistic life. IMG_4435

I’m reading, The Life-Changing Magic of Tidying Up (the Japanese art of decluttering and organizing), by Marie Kondo. 🙂  I have a shelf packed with books on decluttering (they’re going!), but this one is unique — she has a completely different method of decluttering and I’m taking it on!  Attacking my kitchen cabinets is next. I know there are LOTS of items that are well past their dates — OUT they go. I can’t wait to have room in the cabinets that I WILL NOT FILL! I’m going to leave room for the food to “breathe.”  🙂

Seriously, I’m so thrilled that I’ve finally discovered that less really IS more — it gives ME room to breathe.  I’m on a roll, wish me luck!

What’s on Your Plate? (#2)

“Plate” #2

As stated in my prior post, I read a great article in Everyday Health, titled “Sizing Up Your Plate:  Why Portion Control Matters.” This post (#2) is a continuation of #1!

Along the course of my (diabetes) blog journey,  the topic of dining/eating out has come up a few times. Because this was discussed in the article in Everyday Health, I’d like to revisit it. Some important bullet points that were brought up–

  • NO Supersizing!  You and I know this is common sense, BUT — sometimes the challenge of the “good deal” gets in the way. It’s obvious, right? If you can get double the size of an item for only a few cents more, why not do it?  Why not? Because it’s a deadly decision. More food, more carbs is NOT what we need. It will cause weight gain and elevated blood glucose.
  • NO Entree, Please — A great tip to help with portion control, calorie consumption, and monitoring blood glucose, is to order a combination of soup and an appetizer — skip the entree. Trust me, it will be enough. I’ve had some wonderful meals by exercising this tip.
  • “Doggy Bag” WHY is the take-home container called that???  When I was kid and my parents went out for dinner, oftentimes they would bring home the proverbial “doggy bag.” Funny thing — the dog never got the contents. Why then, was it implied that the contents of the container was for the dog? I think it was a way for people to bring home their leftovers, without being embarrassed. Was it a case of “waste not, want not?”  OR was it a case of “I’m no millionaire; I can eat that tomorrow!” (They’ll just throw it out.)  My theory is that the “doggie bag” originated to save face — feed the dog; no embarrassment there. What’s your opinion?          Diabetics would be wise to look to the “doggie bag” (or take-home container) as a way to cut down on calories as well as carbs. Here’s a tip that my sister gave me a long time ago and I found it to be very helpful.  Ask the waiter/waitress for a take-home container, when placing your order. That way, when the food arrives at your table, you can immediately place half into the container. Voila! Out of sight, out of mind. (Thanks, Jean!)  It works perfectly. The following day, you can enjoy your leftovers for any meal you like. [See my next post for a history lesson on doggie bags  🙂 ]
  • The Dreaded Wedding (or other catered affairs) — Why do you dread them? Obviously, catered affairs are the Sodom and Gomorrah in the life of the Type 2 Diabetic. Seriously, it’s an orgy of food. Every catered affair that I’ve ever gone to has included an open bar, followed by food, food, and more food. Between the cocktail hour, the smorgasbord, and/or the sit-down dinner, you’re counting 17 courses topped off with a flaming Viennese table!  🙂  Ugh. They pull out all the stops — there ARE NO stops, no boundaries.  Here are some tips to help you get through these unavoidable fiascos.  Plate #1 — Choose low calorie, low carb foods (shrimp, raw vegetables, etc.). Plate #2 — WAIT! Gauge your time. Remember it takes 20 minutes for the brain to get the message that you’re full. Whether you decide to venture forward or not, remember NOT TO PILE FOOD on your plate. Take a reasonable amount. It’s better to go back a second time, if you really want more food. Take your time.  By the way, nowhere is it written that you HAVE to eat the wedding cake. A bite of it is all the “good luck” that the bride and groom will need.
  • My last and most important tip for the wedding-goer is DANCE!!! Dance, dance, dance — you’ll burn calories, lower your blood glucose, and you’ll feel really good with those endorphins “dancing” through your body.

 

 

 

 

Some Days You Just Do All The Right Things…

Today was one of those days. It was great!  I woke up early, had a healthy breakfast and moved on with my day.   IMG_3413

Lunch came along and I wasn’t really hungry, but I ate anyway — just a chopped salad, mesculin greens, carrots, red onions, sliced red tomatoes, and beets.  I ate the rest of it with a piece of grilled chicken for dinner. Small portion for lunch, medium for dinner.  A tall, icy glass of water, and I’m good to go.

After dinner, I made some sugar-free chocolate pudding, added a dollop of Redi-Whip, and I was one happy camper.  Need to shop tomorrow for some fresh fruit!

I walked a great deal yesterday, because I was in the city.  Unfortunately, I can’t say the same for today, but I’ll fix that tomorrow by starting out with a walk in the morning, and hopefully another at night.  It makes a world of difference in my attitude as well as my waistline.

I Ate the Fish, Before the Fish Ate Me!

It’s 4:45 p.m. — so far, so good. I’d call this day a success.

Walked ( a short one, I admit) first thing this morning, then moved on to an appropriate breakfast. Still need to try an egg white omelet. I have a sensitivity to eggs — they make me sick. Someone told me that, if you’re allergic to eggs, it’s really the yolk that’s getting to you. I need a day that’s not planned, so that I’ll be home and can give it a shot. I’ll do it. The protein will serve me well and I can add veggies.

For today, breakfast and lunch were good. 1/2 an apple was the snack between breakfast and lunch. I’m having an early dinner, as I have to go out by 6:30. So swordfish it is!

I’m cooking it in my trusty grill pan, as we “speak.” LOVE my grill pan! I sprayed a little olive oil on the pan, plopped that sucker in, added a squeeze of lemon and some Chesapeake Bay Seafood seasoning, and let it do its thing on a low flame for a bit.

Have you ever experimented with herbs and spices? Great fun. Penzey Spices is where I get mine. The place is amazing, and you can get them online too. I went to the store once with a friend, and got addicted to the place. They just have SO MUCH, and the salespeople know everything there is to know about their products. They make great gifts, too. I bought some for my sister-in-law, and now she buys from their catalog. Yep, she’s hooked. She’s a wonderful cook, and loves the variety they have. I digress — have to check on the fish.

Added some more of those sumptuous ingredients listed above, flipped it, and it’s grilling slowly. Almost ready. Gazing into the pan now, there’s no guilt about my rage yesterday. I guess it’s easier to be one with my fish not staring into his eyes.

It’s ready, and so am I. My swordfish is sharing the plate (Portion control = I use luncheon-sized plates) with a small, naked (no butter or sour cream) baked potato with a squeeze of lemon, a serving of carrots and string beans.

Yep — so far, so good. Hope you enjoy your healthy meal as much as I am.
