As this day draws to an end, I’ve been thinking about ways that I can “stay on the wagon,” my healthy eating wagon, while getting ready for the 4th.
I’ve been checking out some great recipes, and tonight I kept dinner simple.
Variety of grape tomatoes.
Add a slice of Salmon Filet, a Baked Potato (no butter), and an epicurean delight appeared! Oh, I added a few sliced beets (not shown in picture). By the way, I created a salsa (of sorts) by cutting up the tomatoes with some basil and a few “grates” from a block of parmigiana — all slightly grilled —
— sprinkled it all with fresh lemon juice and VOILA! A delicious healthy meal that didn’t kill my blood glucose level.
Don’t you LOVE when that “happens?” 🙂
